Corn Zucchini Salad

Corn Zucchini Salad
Corn kernels from 2 ears of corn
2 zucchinis, chopped
1 small red pepper, finely chopped
1 Jalapeño, minced
1/2 bunch cilantro, chopped
1/2 red onion, finely chopped
1 bunch spinach , chopped
1/4 C olive oil
1 clove garlic, minced
Juice from 2 limes
1/2 C raw cheddar cheese, grated

Instructions: Mix first 7 ingredients together in a large bowl. In a small bowl whisk together olive oil, garlic and lime juice. Pour over salad and top with cheese.
